BUSINESS CONCEPTIL Padrino Coffee: Italian inspired comfort food with a Pinoy heart
In the beginning, all businessman Ervine Pangwi wanted was a place to have his Café Americano in relative peace and quiet. His office building at Commonwealth in Quezon City provided none at that time. So, he tried to get a coffee shop franchise. Unfortunately, his location and other demographic considerations did not suit the criteria of established café franchisers. Frustrated and somewhat yearning for his favorite roast, Ervine decided to put up his own coffee shop. Envisioning a dining ambience akin to Godfather Don Vito Corleone’s hearth and home, Ervine named his restaurant IL Padrino Coffee, indicating an affinity for the paternal concern and protective instincts of the Padre de Familia. Besides, Ervine was, and still is, a great fan of The Godfather, a classic film from the ‘70s that evoked the indestructible blood bonds of Italian families. So Ervine created IL Padrino Coffee from scratch. It was a venture into the unknown, for he knew nothing about the restaurant business, being in metals and other interests quite different from the food industry. But with his able and enthusiastic daughter Michelle by his side, Ervine consulted with those in the know and grew the business. And from those early days in 2009, IL Padrino Coffee has evolved into five branches: the original shop at Commonwealth, Ayala Fairview Terraces, SM City Clark, Robinsons Starmills Pampanga, and Robinsons Galleria. IL Padrino Coffee serves Italian inspired comfort food familiar to Pinoy tastebuds. They offer, however, little twists and subtle deviations to the classics that give the dishes a new and surprising take. Consider the Pinoy Italian Pizza, rich pomodoro sauce, adobo flakes, bell pepper, tomato, onion, cottage cheese, parmesan cheese, mozzarella cheese, and salted eggs, served piping hot over a thin 10-inch crust. The Italian White Pizza is an utterly delectable combination of cream cheese, mozzarella cheese, bacon, garlic, olives, and fresh basil leaves. The simple Chicken Crema al Pesto with its chunks of chicken in pesto cream sauce with parmesan cheese, appears to be deceiving in its simplicity. Nonetheless, it is a signature Il Padrino Coffee dish, delighting pesto and pasta lovers. It is so good that even non-pesto eaters have become converts. |
IL Padrino Coffee also serves a selection of other Italian classics like Pasta Carbonara, Pasta Bolognese, Spaghetti with Meatballs, Seafood Marinara, and Caesar Salad.
And of course, there’s the coffee. Growing up in Sagada, Ervine is all too familiar with the coffee culture of the north, and he knows how coffee is a great equalizer in business as well. Michelle calls coffee a “social lubricator”, which is often instrumental in making or breaking deals. And both recognize the value of the coffee experience after a satisfying meal, or even just accompanying convivial conversation. IL Padrino Coffee offers coffee choices to suit different palates. Those who like it hot can have their cup of Espresso, Macchiato, Americano, Latte, Mocha, Cappuccino. There are also cool concoctions like ice blended Mocha, Cappuccino, Toffee Coffee, Coffee Jelly, Choco Macadamia, and even a hazelnut-chocolate infused flavor. Because IL Padrino Coffee is a great place for family, friends, and colleagues to meet and celebrate, the shop also offers private function rooms and packages for special occasions and business meetings. And at the end of the day, Ervine and his daughter beam at the sight of diners enjoying the IL Padrino Coffee experience. For after all, this is what they’ve envisioned Il Padrino Coffee to be, a place where good food and good coffee can be enjoyed side by side with good conversation with people they love. |
